This document specifies a method for the quantitative determination of hydroxytyrosol and tyrosolcontent in extra virgin olive oils using reverse phase high performance liquid chromatography (RPHPLC)with spectrophotometric detection. The method is also applicable to all other olive oils of adifferent commercial category.
